Irish - Style Sourdough

My absolute favorite flour is the Irish - Style Flour from King Arthur. This loaf uses that flour and a touch of honey to make the most delicious, hearty bread perfect for toast on a chilly day.

Ingredients:
330g water
100g active sourdough starter
250g Irish-Style Flour
250g Bread Flour
30g Honey
12g salt
1.) Mix together all ingredients. I find it easiest to mix the honey and water first, then starter to ensure everything is combined.
2.) Let dough rest for 30 minutes, and perform 3 sets of stretch and folds each 30 minutes apart.
3.) Bulk-ferment dough until almost doubled.
4.) Shape and place in banneton. Let dough cold-ferment in the refrigerator overnight.

5.) Preheat Dutch Oven to 450°. Score dough and bake with a lid on for 30 minutes and lid off for 10 minutes.
6.) Cool on a wire rack and enjoy!
