Snickerdoodle Bars

Need another recipe for the leftover sourdough discard you have sitting in your fridge? These sourdough discard snickerdoodle bars are the perfect small batch treat to use up some!

Ingredients:
110g brown sugar (1/2 cup)
55g white sugar (1/4 cup)
113g softened salted butter (1/2 cup, 1 stick)
60g sourdough discard (~1/2 cup)
165g all purpose flour (1 1/3 cup)
1 egg
1tsp vanilla extract or paste
1/2tsp cinnamon
1/2tsp cream of tartar
1/4tsp salt
1/2 bag Hershey’s Cinnamon Chips (optional)
Topping:
3tsp white sugar
1/2tsp cinnamon

1.) Preheat oven to 350° and grease an 8x8 pan.
2.) Cream butter with both sugars. Mix in vanilla and sourdough starter.
3.) Stir in egg.
4.) Mix in all dry ingredients until combined.
5.) Mix in cinnamon chips if using.
6.) Pour batter into the baking dish. Sprinkle cinnamon sugar topping on top.
7.) Bake for 30-35 minutes, rotating 180° halfway through.
8.) Let cool, slice and enjoy!
