Spelt Sourdough Loaf

Ingredients:
330g water
150g active sourdough starter
30g honey
250g spelt flour
250g bread flour
10g salt
Mix all ingredients. Let rest 30 minutes, perform 3 sets of stretch and folds. Let bulk ferment until almost doubled and shape. Bake at 450° in a dutch oven for 30 minutes with the lid on and 10 minutes with the lid off.
